LASTing Impression - Desserts
No
single course in a well planned meal can turn heads and
create memories as dessert. This class will teach you the
basic techniques of baking, custards, fruit desserts, dough
and even confectionary. The other focus of the class will
be to teach the students how to make desserts that will
hold or can be prepared in stages for less stressful kitchen
time. As always we will discuss ways to take the basic elements
of each dessert and how to change the flavor profile for
a whole new dessert.
Students will prepare:Cappuccino pot du crème,
Apple and dried fruit cobbler, Triple chocolate cookie,
Citrus mousse with twill cups, Banana Hazelnut cake with
Italian Meringue.
