in a bowl – Soups and Stocks and Sauces
To
me there is nothing more gratifying than giving my family
a bowl or warm, nutritious soup. It’s almost like
giving a big hug in a bowl. The foundation of all good soups
starts with a good stock or broth once you have mastered
the art of making stocks. A hearty healthy soup is just
a few steps away. In this class you will learn several techniques
for making stock (some of them fast and some of them slow)
and how to transform your beautiful stocks into great soups
and even a few sauces.
Students will prepare: Pressure cooker beef stock, Roasted
chicken stock, Chicken and dumpling soup, Southwestern Beef
Stew, Spicy Tomato Seafood sauce.
